Almond Joy Protein Balls

I’ve shared this recipe many, many times before, but it deserves it’s own special place on the blog because we all need it in our lives!

It’s BY FAR my favourite protein ball recipe, and is packed with so many good nutrients. I love it as a quick snack throughout the day - especially while breastfeeding because a) one hand required and b) THE HUNGER IS UNREAL!!

INGREDIENTS:

  • 1 cup rolled oats

  • 3 tbsp raw cacao powder (or chocolate protein powder)

  • 1/3 cup + 1/4 cup unsweetened coconut flakes

  • 1/2 cup ground flaxseed

  • 1 tbsp chia seeds

  • 1/4 cup chopped dark chocolate (I love JoJo’s Chocolate Bark)

  • 1/2 cup natural peanut butter

  • 1/3 cup raw honey

  • 2 tbsp coconut oil

  • 1/3 cup almonds, crushed

DIRECTIONS:

Mix oats, cacao powder, 1/3 cup coconut, flaxseed, chia seeds, and chocolate together in a bowl. In a saucepan, melt peanut butter, honey, and coconut oil together and pour over dry mixture. Mix well. In a separate bowl, combine 1/4 cup coconut and almond together. Form balls with the oat mixture, and roll in almond mixture for an outer coating. Store in fridge!
